Oriental Chicken Salad
- 4 boneless, skinless chicken breasts
- 1- 8 oz. sliced water chestnuts, drained and halved
- 3 green onions, chopped
- 1/4 c. sesame seeds
- 1/3 c. sliced almonds
- 1 Tbsp. poppy seeds
- 4 Tbsp. sugar
- 4 Tbsp. cider vinegar
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. oil
- 3 oz. chow mein noodles
- 1 bag Romaine lettuce
- Boil chicken breasts in water with salt and pepper until done.
- Chop chicken.
- In mixing bowl, combine chicken, water chestnuts, onions, sesame seeds, almonds and poppy seeds.
- In another bowl, combine sugar, vinegar, salt, pepper and oil.
- Mix or shake well.
- Pour over chicken mixture.
- Refrigerate for 3 - 4 hours or overnight.
- Before serving, toss with noodles and lettuce.
