Garlic Potato Bombs

  1. Steam, boil or microwave the potatoes until tender.
  2. Mash until smooth, then combine with mayonnaise, garlic and parsley.
  3. Season to taste.
  4. Roll tablespoons of mixture into balls and roll in flour.
  5. Dip the potato balls in beaten egg and then coat with breadcrumbs.
  6. Chill for 30 minutes.
  7. Heat the oil in a large fry-pan.
  8. Shallow fry balls until golden brown, drain on absorbent paper.
  9. Combine remaining mayonnaise and garlic and serve drizzled over potato balls.
