Garlic Potato Bombs
- 500g potatoes Safeway 2 pkg For $5.00 thru 02/09
- 1/4 cup KRAFT Creamy Egg Mayonnaise
- 2 clove garlic, crushed
- 2 tablespoons finely chopped parsley
- salt and pepper, to taste
- 1/2 cup plain flour
- 1 egg, lightly beaten
- 1/2 cup dried breadcrumbs
- oil for shallow frying
- 1/4 cup KRAFT Creamy Egg Mayonnaise, extra
- 1 clove garlic, extra, crushed
- Steam, boil or microwave the potatoes until tender.
- Mash until smooth, then combine with mayonnaise, garlic and parsley.
- Season to taste.
- Roll tablespoons of mixture into balls and roll in flour.
- Dip the potato balls in beaten egg and then coat with breadcrumbs.
- Chill for 30 minutes.
- Heat the oil in a large fry-pan.
- Shallow fry balls until golden brown, drain on absorbent paper.
- Combine remaining mayonnaise and garlic and serve drizzled over potato balls.
