Chicken With Vegetables & Rice
- 2 tablespoons Land O Lakes Butter
- 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon finely chopped fresh garlic
- 1/4 cup chopped green onions
- 1 medium red, yellow or green bell pepper, coarsely chopped
- 8 ounces sugar snap peas or pea pods, tips and strings removed, cut in half
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup dry white wine*
- 2 cups hot cooked wild rice
- Melt butter in 10-inch skillet until sizzling; add chicken and garlic.
- Cook over medium-high heat, stirring often, 5-7 minutes or until chicken is no longer pink.
- Stir in all remaining ingredients except wine and rice.
- Continue cooking, stirring often, 3-5 minutes or until vegetables are crisply tender.
- Stir in wine.
- Continue cooking, stirring constantly, 1-2 minutes or until heated through.
- Serve over rice.
- *Substitute water.
