Strawberry Cheesecake Pie

  1. In a large bowl beat milk, pudding mix and lemon peel with wire whisk for 1 minute.
  2. (Mixture will be very thick.)
  3. Whisk in half of the whipped topping.
  4. Carefully spread half of this mixture in crust.
  5. Spoon about 2/3 of the strawberry preserves over the pudding mixture.
  6. Top with the remaining pudding mixture.
  7. Refrigerate for at least 4 hours or until set.
  8. Top with remaining strawberry preserves and whipped topping.
  9. Store in refrigerator.
