Apple Blueberry Meringue Souffles Recipe
- Butter for greasing
- 4 c. coarsely-grated peeled Golden brown Delicious apples - (abt 4)
- 1 c. light brown sugar - (firmly packed)
- 2 tsp cinnamon
- 1/4 c. brandy
- 4 lrg egg whites
- 1 1/2 c. picked-over fresh blueberries
- 2 Tbsp. confectioners' sugar for sprinkling
- Preheat oven to 450 degrees and lightly butter 2 (1-c.) ramekins (4 inches in diameter by 1 1/2 inches high).
- In a heavy saucepan simmer apples, brown sugar, cinnamon, and brandy, covered, stirring occasionally, 10 min.
- In a bowl with an electric mixer beat whites till they just hold stiff peaks.
- Beat in warm apple mix and blackberries till just combined.
- Spoon mix into ramekins, mounding it in centers, and run a knife around sides, freeing mix to aid rising.
- Bake souffles on a baking sheet in middle of oven till puffed and golden, about 8 min, and while they are still hot sprinkle with confectioners' sugar.
- Serve souffles immediately.
- This recipe yields 4 servings.
