Herbed Yogurt Cheese
- 2 tablespoons chopped fresh parsley
- 2 tablespoons minced fresh chives
- 1 teaspoon coarsely cracked pepper
- 34 teaspoon salt
- 1 quart plain low-fat yogurt
- Stir parsley, chives, pepper and salt into yogurt.
- Moisten a coffee filter or double layer of cheesecloth.
- Place filter in top of a drip coffee maker or cheesecloth in a sieve.
- Add yogurt, fold top ends over, and let drip at room temperature, or overnight.
- When cheese stops dripping and feels firm enough to hold its shape, turn out and refrigerate.
- Use as a soft spread.
