Authentic, Rich and Healthy Vichyssoise

  1. Wash the potato well and wrap with plastic wrap with the skin on.
  2. Poke several holes with a toothpick.
  3. Microwave the potato until soft.
  4. (It depends on the size but 3~4 minutes at 600 W is an estimate).
  5. Peel the potato.
  6. Be careful not to burn yourself.
  7. Add the potato to a food processor and mash roughly with a fork.
  8. Chop finely or slice the onion and place on a microwave safe plate.
  9. Cover with plastic wrap and microwave until translucent (about 3~4 minutes at 600 W).
  10. Add all the ingredients in the food processor and puree until smooth, adjusting the seasoning to your liking.
  11. This is how it looks like when it's done.
  12. Sprinkle basil, parsley and other herbs.
  13. Top with croutons like this.
  14. This is the version with Asian sweet potato.
