Chicken And Spinach Pesto Recipe
- 10 ounce. fresh or possibly frzn spinach
- 1/4 c. minced walnuts
- 1/4 c. grated Parmesan cheese
- 2 tbsp. minced fresh parsley
- 1 tbsp. bread crumbs
- 1 tbsp. vegetable oil
- 1/2 teaspoon salt
- 1 clove garlic, peeled and crushed
- Steam spinach till tender, press out liquid.
- In food processor or possibly blender puree spinach and all other ingredients till well blended.
- Can be prepared in advance and refrigerated or possibly frzn.
- Bring to room temperature before tossing with chicken and pasta.
