Apple Oatmeal Muffins
- 2 cups all-purpose flour
- 1 cup quick oats
- 3 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 8 tbsp. butter, softened
- 1-1/2 cup brown sugar, firmly packed
- 4 eggs
- 2 tsp. vanilla
- 2 lg. granny smith apples
- 2 tbsp. lemon juice
- 1 cup golden raisins (optional, but highly suggested!)
- Heat oven to 350F.
- Sift together flour, baking powder, baking soda, salt and cinnamon.
- Stir in quick oats.
- In separate bowl, beat butter and sugar together until fluffy (about 3 min.
- w/ electric mixer).
- Beat in eggs and vanilla.
- Stir in flour mixture.
- Peel, core, and dice the apples.
- Toss with lemon juice and add to batter.
- Fold in raisins.
- Spoon batter into greased muffin pan or use paper liners, filling each cup about half full.
- Bake 18-22 minutes or until muffins are golden brown and firm.
