Gorditas (Corn Disk)
- 3 cups Maseca Masa Harina
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 2- 1/4 cups Warm Water
- 2 cups Vegetable Oil
- In a large bowl, add the masa harina, baking powder and salt; mix.
- Add the warm water and mix with your hands until a smooth dough is formed (a good way to tell is that it doesnt stick to your fingers that much).
- Heat the skillet on medium-high heat; add the oil.
- To form the disk, grab dough about the size of a lemon, form a ball and the flatten it with your palms, turning as you go to form the disk.
- Fry until golden brown (they start to float when almost done).
- Drain on a paper towel, slice in the middle and stuff with meat or beans.
- Note: in the photo, mine are stuffed with refried beans and carnitas.
