Gorditas (Corn Disk)

  1. In a large bowl, add the masa harina, baking powder and salt; mix.
  2. Add the warm water and mix with your hands until a smooth dough is formed (a good way to tell is that it doesnt stick to your fingers that much).
  3. Heat the skillet on medium-high heat; add the oil.
  4. To form the disk, grab dough about the size of a lemon, form a ball and the flatten it with your palms, turning as you go to form the disk.
  5. Fry until golden brown (they start to float when almost done).
  6. Drain on a paper towel, slice in the middle and stuff with meat or beans.
  7. Note: in the photo, mine are stuffed with refried beans and carnitas.
