Turkey Pot Pie (With Thanksgiving Leftovers)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 12 cup celery, chopped
- 1 cup onion, diced
- 1 cup carrot, chopped (can use leftover carrots if you made a glazed carrot for Thanksgiving)
- 1 12 cups mashed potatoes (see my recipe for perfect mashed potatoes)
- 1 cup gravy
- 2 cups turkey, cooked, diced
- 12 cup peas (or green beans from your green bean casserole)
- 2 teaspoons poultry seasoning
- 1 pie crust (see my recipe)
- Add oil and butter to skillet and heat over medium heat.
- Add celery, onion, and carrots.
- Sautee until golden.
- Add gravy, mashed potatoes, turkey, peas, green beans, and poultry seasoning.
- Pour in the bottom of a greased pie pan.
- Roll out pie crust and place on top of filling.
- Pinch the edges, cut off excess crust, and poke holes in crust with a fork.
- Bake in preheated oven at 450 for 10 minute
- Reduce heat to 350, cook an additional 30-40 minutes, or until golden.
