Autumn Apple Cookies
- 1 granny smith apple
- 1 teaspoon coconut oil or 1 teaspoon butter
- 14 teaspoon cinnamon
- 14 teaspoon allspice
- 5 tablespoons Crisco
- 5 tablespoons butter (softened )
- 13 cup sugar
- 13 cup brown sugar
- 34 teaspoon vanilla extract
- 14 teaspoon almond extract
- 14 teaspoon cinnamon
- 14 teaspoon allspice
- 14 teaspoon pumpkin pie spice
- 1 egg
- 2 cups self-rising flour
- caramel candy
- Dice apple into small cubes.
- Fry it over medium heat, using coconut oil, to desired softness.
- Add cinnamon and allspice.
- Set aside.
- In a seperate ( large ) bowl, beat butter and Crisco until creamy.
- Add sugars, and beat until all is incorporated.
- Add vanilla and almond extract.
- ( If you don't like almond extract, you can just us 1 teaspoons vanilla extract.
- ).
- Add the cinnamon, allspice and pumpkin pie spice and mix.
- Add the egg.
- Gradually stir in the flour.
- Cut caramel candies ( as many or as little as you like ) into 4 pieces.
- Add them and the apples to the mixture, and stir.
- Roll into 1-inch balls and press onto an ungreased cookie sheet.
- ( Cookies will NOT spread much.
- ).
- Bake at 350 degrees for about 20 minutes.
- Let cool.
- (Note: If you don't like apples, you can just put caramels.
- If you don't like caramels, you can just add the apples.
- If you don't like either, you don't have to add anything!
- Also, you DO NOT want to overcook these!
- The caramels get hard and you can barely chew them!
- They're terrible!
