Apricot And Ginger Muffins Recipe

  1. Preheat oven to 400F, prepare pans.
  2. In a large bowol sift together, flour, sugar, b/pdr, salt & ginger.
  3. Combine egg, lowfat milk, melted butter, grated peel & minced apricots.
  4. Add in dry mix to wet mix till just combined.
  5. Spoon into pans & bake for 20-25 mins.
  6. Makes 12 muffins.
