Apricot And Ginger Muffins Recipe
- 13/40 c. self-raising flour
- 3 Tbsp. castor sugar
- 1/2 tsp salt
- 1 x slightly beaten egg
- 11/20 tsp grnd ginger
- 3/4 c. lowfat milk
- 1/3 c. melted butter
- 3/4 c. finely minced dry apricots
- 11/20 tsp grated lemon peel
- 1 tsp baking pwdr
- Preheat oven to 400F, prepare pans.
- In a large bowol sift together, flour, sugar, b/pdr, salt & ginger.
- Combine egg, lowfat milk, melted butter, grated peel & minced apricots.
- Add in dry mix to wet mix till just combined.
- Spoon into pans & bake for 20-25 mins.
- Makes 12 muffins.
