Escarole-Chicken Dumplings

  1. In a medium pot over high heat, heat oil.
  2. Add chicken, ginger, sugar, and fish sauce; cook until liquids are reduced, 5 to 7 minutes.
  3. Add escarole and cook until bright green, about 1 minute.
  4. Transfer to a paper towel-lined baking pan to cool, about 20 minutes.
  5. Place 1 tablespoon filling in center of 1 wonton wrapper.
  6. Moisten edges of wrapper.
  7. Pull up 2 opposite corners, then remaining corners, leaving the top open.
  8. Repeat.
  9. Steam dumplings in a steamer until translucent, 5 minutes.
  10. Serve with soy sauce.
