Mandarin Salad
- 1 head boston lettuce
- 1 small cucumber
- 2 small tomatoes
- 1 green pepper
- 12 avocado
- 5 radishes
- 1 peach
- 1 slice canned pineapple
- 1 mandarin orange
- 14 lb fresh strawberries
- 1 clove garlic
- 2 tablespoons chopped fresh parsley
- 2 tablespoons white vinegar
- 1 teaspoon sugar
- 12 teaspoon salt
- fresh ground pepper
- 14 cup orange juice
- 2 tablespoons vegetable oil
- Wash lettuce and tear into small pieces.
- Cut cucumber& tomatoes in slices.
- Core, seed and slice green pepper.
- Peel& slice avocado.
- Slice radishes.
- Peel peach& cut into wedges.
- Cube pineapple slice.
- Hull& cut strawberries in half.
- Arrange all ingredients in a large bowl.
- Just before serving, dress with orange vinaigrette.
- For the Dressing: In blender, chop garlic and parsley.
- Add vinegar, sugar, salt& pepper.
- Process to mix.
- With motor running, gradually add orange juice and oil.
- Makes about 1/2 cup.
