10 Hour Turkey

  1. Combine all the seasonings in a bowl
  2. Using your hands, gently loosen the skin from the meat of the turkey.
  3. Careful not to tear the skin.
  4. Using half of the seasonings and rub thoroughly under the loose skin directly onto the meat
  5. Now rub the remaining half of the seasonings directly onto the skin of the turkey
  6. Place turkey in a roasting pan and cover.
  7. If your roasting pan has a metal rack use that inside the pan
  8. Bake at 250F for 9 hours then remove lid and baste the turkey every 15 minutes for the last 1 hour to brown the skin.
  9. I do not stuff the turkey as there will be lots of liquid in the roasting pan.
  10. So lots of gravy, or use the liquid for soup stalk.
  11. Your choice.
  12. I cook mine overnight so you wake up to the smell of turkey and it frees up the oven for those busy Christmas diners.
