Zesty Carrot Gratin

  1. Slice carrots into 1/4 inch thick rounds.
  2. Boil in water for 5 minutes.
  3. Drain, reserving 1/4 cup of water.
  4. Combine reserved water, paprika, onion, horseradish, mayonnaise, cheese, salt and pepper.
  5. Add carrots and spoon into a buttered 2 quart baking dish.
  6. Combine bread crumbs andmelted butter and sprinkle over carrot mixture.
  7. Bake in a 350*F oven for 20 minutes.
