Holiday Cranberry Salad Recipe
- 1 pound fresh and cleaned cranberries, grnd
- 1 c. sugar
- 1 (8 ounce.) can crushed pineapple (reserve juice)
- 1 lg. red apple, cored, pared and grated
- 1 (3 ounce.) pkg. red Jello (cherry, raspberry)
- 1 (3 ounce.) pkg. cream cheese, softened
- Whipping cream
- 1 1/2 c. minced pecans
- 3/4 c. warm water
- Pour sugar over cranberries and let stand till dissolved.
- Put in refrigerator to chill.
- Add in 3/4 c. warm water to Jello; then add in the pineapple juice.
- Mix well and place in refrigerator to get cool.
- Whip cream and add in cream cheese.
- Fold in 1 c. of minced pecans.
- Add in apple, pineapple, and 1/2 c. pecans to the cranberries.
- Mix well.
- Add in Jello and mix again.
- Place half of the cranberry mix in a serving bowl.
- Top with half of the cream cheese mix.
- Repeat.
- Place in refrigerator till serving time.
