Onion Shortcake II

  1. Saute onion in oleo in large skillet over med.
  2. heat until tender.
  3. Set aside.
  4. Combine egg and next 3 ingredients; add the corn muffin mix and stir just until moistened.
  5. Pour into a greased 8-inch square pan; set aside.
  6. Combine onion mixture, sour cream and 1/2 the cheese; spread evenly over the batter.
  7. Bake at 350F for 25 minutes; sprinkle with remaining cheese and bake 5 minutes more.
