BBQ Vegetable Salad with Haloumi

• olive oil spray
• 1 large red onion, sliced
• 1 green capsicum, cut into 2.5cm chunks
• 1 red capsicum, cut into 2.5 cm chunks
• 1 yellow capsicum, cut into 2.5 cm chunks
• 1 small eggplant, sliced lengthways Safeway 1 ea For $1.28 thru 02/09
• 2 medium zucchini, sliced lengthways
• 120g button mushrooms, halved
• 200g Haloumi cheese cheese, cut into 1cm cubes
• 50g baby spinach leaves
• 1/3 cup KRAFT Italian Dressing

1. Spray the vegetables and haloumi with oil and chargrill in batches until golden.
2. Combine the vegetables with the haloumi and spinach, drizzle with the dressing and serve immediately.
