Lori's Fish With Bean Puree

  1. Soak beans 8 hours.
  2. Drain.
  3. Place in a pot.
  4. Cover with water.
  5. Bring to a boil.
  6. Reduce.
  7. Cover.
  8. Simmer 1 hour.
  9. Drain.
  10. In a skillet heat oil.
  11. Add the garlic, shallots, thyme and anchovies.
  12. Saute 3 minutes.
  13. Add broth and beans.
  14. Saute 3 more minutes.
  15. Puree.
  16. Place in a saucepan.
  17. Clean out skillet.
  18. Dredge fish in flour to coat.
  19. Heat oil in skillet.
  20. Add fish.
  21. Saute until golden on both sides (sbout 3 minutes each).
  22. Re-heat puree.
  23. Place on plates.
  24. Top with fish.
  25. Garnish with onions and thyme.
  26. YUM!
