Lori's Fish With Bean Puree
- 1 cup dried white bean
- 1 tablespoon olive oil
- 1 garlic clove (minced)
- 1 shallot (minced)
- 1 teaspoon thyme (minced)
- 2 anchovies (rinsed, minced)
- 12 cup fish stock
- 1 lb fish fillet (any white, in chunks)
- 1 cup seasoned flour
- 14 cup olive oil
- 1 green onion (minced)
- fresh thyme sprig
- Soak beans 8 hours.
- Drain.
- Place in a pot.
- Cover with water.
- Bring to a boil.
- Reduce.
- Cover.
- Simmer 1 hour.
- Drain.
- In a skillet heat oil.
- Add the garlic, shallots, thyme and anchovies.
- Saute 3 minutes.
- Add broth and beans.
- Saute 3 more minutes.
- Puree.
- Place in a saucepan.
- Clean out skillet.
- Dredge fish in flour to coat.
- Heat oil in skillet.
- Add fish.
- Saute until golden on both sides (sbout 3 minutes each).
- Re-heat puree.
- Place on plates.
- Top with fish.
- Garnish with onions and thyme.
- YUM!
