Sheila's Apple Pie
- 1 each pie shell (9 inch) 9 inch, unbaked
- 4 cups apples green
- 1 cup sugar
- 1/2 cup cornstarch
- 1 teaspoon lemon extract
- 1 teaspoon vanilla extract
- 3/4 cup pancake mix
- 23 cup sugar
- 1 each eggs beaten
- 1/4 cup butter melted
- Peel and cut up 4 cups apples.
- Combine apples with 1 cup sugar, cornstarch, lemon extract, and vanilla, pour into shell.
- Top with mixture of pancake mix, 23 cup sugar, egg and melted butter.
- Bake for 35 minutes at 350F (180C).
