Sheila's Apple Pie

  1. Peel and cut up 4 cups apples.
  2. Combine apples with 1 cup sugar, cornstarch, lemon extract, and vanilla, pour into shell.
  3. Top with mixture of pancake mix, 23 cup sugar, egg and melted butter.
  4. Bake for 35 minutes at 350F (180C).
