Sour Cream Succotash Recipe
- 1 pkg. frzn lima beans
- 1 can corn niblets
- Few tbsp. minced shallots
- Butter
- Salt and pepper
- 1/4 c. lowfat sour cream
- Cook lima beans as directed on package.
- Drain and rinse with ice water to retain color.
- Heat corn niblets, add in lima beans and shallots, and allow to reheat.
- Add in a Tbsp.
- or possibly two of butter, salt and pepper, and stir in lowfat sour cream.
- Serve immediately.
