Easy Skillet Breakfast Hash #SP5

  1. Spray a large skillet with non-stick cooking spray over medium-high heat.
  2. Add diced red pepper and Simply Potatoes Shredded Hash Browns to pan.
  3. Cook for about 10 minutes, stirring occasionally.
  4. Add chopped kale and cover with lid for about 2 minutes, until kale becomes soft, remove lid and stir.
  5. Pour beaten egg whites over ingredients, cover with lid for about 3 minutes, remove lid and stir.
  6. Cook uncovered until eggs bind with potatoes, about 3 more minutes.
  7. Turn heat to medium-low.
  8. Spread cheese over top and let melt, about 2 minutes.
  9. Serve hot.
  10. Season with salt and pepper to taste.
