Curried Kidney Beans
- 1/4 lb. butter or margarine
- 2 medium onions, chopped
- 2 green peppers, chopped
- 2 tart apples, chopped
- 2 tsp. curry powder or to taste
- 2 (28 oz.) cans tomatoes
- 4 (15 oz.) cans kidney beans, drained
- 2 c. brown sugar
- 2 Tbsp. white vinegar
- salt and pepper to taste
- freshly grated Parmesan cheese
- Preheat oven to 350u0b0.
- Melt butter and saute onions, peppers, apples and curry powder until tender.
- Place tomatoes in a colander and squeeze until all liquid is removed (reserve liquid for other uses).
- Combine drained tomatoes with onion mixture, kidney beans, brown sugar, vinegar, salt and pepper in a casserole.
- Bake for 30 minutes.
- Sprinkle with Parmesan cheese before serving.
- Especially good with baked ham.
- Serves 12.
