Chocolate Butterscotch Torte Recipe
- 1 (8 1/2 ounce.) box chocolate wafer cookies, crushed
- 1/4 c. semi-sweet chocolate chips, minced
- 1/4 c. butterscotch chips, minced
- 3/4 c. walnuts, toasted & minced
- 1/2 c. butter, melted & cooled
- Crust: Combine all ingredients and press onto bottom and sides of a 9 inch springform pan.
- Refrigeratewhile preparing filling.
- Filling: Heat chocolate and butterscotch chips in microwave.
- Cold.
- Combine brown sugar, cream cheese and vanilla in double boiler over simmering water.
- Mix with electric mixer till creamy (5 min).
- Add in egg yolks, one at a time.
- Continue beating for approximately 10 min.
- Remove from heat.
- Blend in butter, one piece at a time, with mixer at low speed.
- Stir in chocolate mix.
- Chill for approximately 30 min, stirring occasionally.
- Beat egg whites with powdered sugar and cream of tartar till stiff peaks form.
- Mix in beaten whipped cream and egg whites alternately into chocolate mix.
- Gently mix in walnuts.
- Pour into crust lined pan and chill for at least 6 hrs.
- Garnish with chocolate leaves and whipped cream.
