Barbecue Salmon with Zucchini and Quinoa

  1. Mix barbecue sauce and A.1.
  2. Reserve 2 Tbsp.
  3. for later use.
  4. Brush fish with half the remaining barbecue sauce mixture; place, sauce sides down, in large nonstick skillet.
  5. Cook on medium-high heat 2 min., turning and brushing with remaining sauce after 1 min.
  6. Remove from skillet; cover to keep warm.
  7. Add broth, quinoa and garlic to skillet; stir.
  8. Bring to boil; cover.
  9. Simmer on medium-low heat 5 min.
  10. Stir in zucchini; top with fish.
  11. Simmer, covered, 7 min.
  12. or until quinoa is tender and fish flakes easily with fork.
  13. Remove from heat.
  14. Brush fish with reserved sauce.
  15. Let stand, covered, 5 min.
  16. Top with onions.
