Braised Baby Peas with Pearl Onions and Herbs

  1. Bring a medium saucepan of water to a boil.
  2. Add the pearl onions and boil for 5 minutes.
  3. Drain and rinse under cold water.
  4. Peel the onions, leaving the root end intact.
  5. In a medium, deep skillet, melt the butter.
  6. Add the pearl onions and cook over moderately high heat until browned, about 3 minutes.
  7. Add the peas and chicken broth, cover and simmer over moderate heat until the peas are tender and bright green, about 5 minutes.
  8. Remove from the heat.
  9. Add the mint and chives, season with salt and pepper and serve.
