Holiday White Salad
- 1 regular pkg lemon Jell-O gelatin
- 1 large can crushed pineapple, drained and juice reserved
- 1 12 cups celery, chopped
- 2 cups miniature marshmallows, divided
- 8 ounces cream cheese, cut up
- 1 cup pecans, chopped
- 12 pint whipping cream, whipped
- 1 teaspoon flour
- Drain pineapple, and save juice.
- Prepare Jello according to package directions, and refrigerate 10 minutes, until semi-solid.
- Mix 1 cup of marshmallows, drained pineapple, celery, cut-up cream cheese and pecans into Jello.
- Carefully fold in whipped cream.
- Place in serving dish.
- Heat pineapple juice with flour until thickened.
- Add 1 cup marshmallows to hot pineapple juice and stir until smooth.
- Let cool.
- Top the whipped cream-pineapple mixture with the cooled marshmallow-juice mixture.
- Chill.
