Cold Weather Chili
- 1 1/2 lb. lean beef chuck, cut into 1/2-inch cubes
- 2 Tbsp. oil
- 2 Tbsp. all-purpose flour
- 1 c. chopped onion
- 1 green or red pepper, chopped
- 1 Tbsp. minced garlic
- 1 1/2 c. beef broth
- 1/2 tsp. each: dried oregano leaves and cumin
- 1 Tbsp. chili powder
- 1/2 tsp. salt
- 1 c. tomato sauce
- 11/2 oz. unsweetened chocolate, coarsely chopped
- Heat oil in a Dutch oven or a heavy large saucepan.
- Sprinkle the meat with flour.
- Brown in oil.
- Add a little extra oil to the browned meat, if needed.
- Stir in onion, green pepper and garlic. Cook until soft.
- Stir in the beef broth, oregano, cumin, chili powder and salt.
- Bring to a boil, then reduce heat and simmer, covered, for 45 minutes.
- Stir in tomato sauce and chocolate. Simmer, uncovered, for 25 to 30 minutes until thickened.
- Serve hot.
