Lovely Brown Rice and Lentils
- 1 tablespoon olive oil
- 1 large onion, diced
- 12 green pepper, diced
- 12 cup brown rice, uncooked
- 12 cup lentils, uncooked
- 1 12 teaspoons cumin
- 12 teaspoon coriander
- 14 teaspoon turmeric
- 14 teaspoon hot sauce (or to taste)
- 2 cups vegetable broth
- Saute onion with oil in medium saucepan until onion is translucent.
- Add green pepper; saute for 3 minutes.
- Add rice; saute 2 more minutes.
- Add lentils, spices, hot sauce, and veggie broth.
- Cover and bring to boil; simmer 35-40 minutes, or until water is mostly absorbed.
