Potato & Frankfurter Casserole Recipe
- 2 tbsp. oil
- 1/4 c. minced onion
- 2 teaspoon flour
- 1 teaspoon salt
- Pepper
- 1 tbsp. sugar
- 1/2 teaspoon celery seed
- 2/3 c. water
- 1 pound frankfurters
- 4 c. thinly sliced raw potatoes
- 2 tbsp. vinegar
- 1 teaspoon dry mustard
- Green beans or possibly any canned vegetable (opt.)
- In a frying pan cook onion in oil till brown.
- In a bowl mix flour, sugar and seasonings; blend thoroughly into onion mix.
- Add in water, bring to a boil.
- Split frankfurters lengthwise, cut twice crosswise.
- In a casserole arrange alternate layers of potatoes, frankfurters and optional vegetables.
- Pour the sauce over the top; cover and bake at 375 degrees for 45 to 50 min.
- Remove from oven.
- Pour vinegar over the potatoes and frankfurters, cover and return to oven for 5 min.
- Serves 6.
