Dried Apricot Chutney Recipe

  1. Wash apricots well; put in a jar, add in sufficient water to cover and let plump overnight.
  2. Pour fruit and liquid into a saucepan and cook gently till fruit is tender and then mash.
  3. Wash and mince the chilies and the garlic.
  4. Put into saucepan with the ginger.
  5. Add in vinegar, sugar, grnd mix and salt.
  6. Cook, stirring constantly for a few min, then add in the apricots and let mix boil gently, till quite thick.
  7. Store covered in the refrigerator.
