Dried Apricot Chutney Recipe
- 1 c. dry apricots, seeded
- 1 c. sugar
- 1/2 ounce. chilies, dry
- 1/4 ounce. ginger, peeled and grnd
- 1 1/2 cloves garlic, peeled
- 1 c. white vinegar
- Salt to taste
- Wash apricots well; put in a jar, add in sufficient water to cover and let plump overnight.
- Pour fruit and liquid into a saucepan and cook gently till fruit is tender and then mash.
- Wash and mince the chilies and the garlic.
- Put into saucepan with the ginger.
- Add in vinegar, sugar, grnd mix and salt.
- Cook, stirring constantly for a few min, then add in the apricots and let mix boil gently, till quite thick.
- Store covered in the refrigerator.
