Absurdly Easy Rice and Peas Ala Lena
- 2 (15 1/2 ounce) cansgoya small red beans, drained and rinsed
- 1 (15 ounce) can coconut milk
- 2 green onions, chopped
- 2 garlic cloves, chopped
- 2 sprigs fresh thyme or 12 teaspoon dried thyme
- 2 scotch bonnet peppers, whole
- 4 cups chicken broth
- 2 cups uncooked long grain white rice
- salt
- In a large pan, mix broth and coconut milk.
- Add green onion, garlic, thyme, and over medium low heat bring to boil.
- Add the rice and stir gently for about 2 minutes.
- Continue cooking on medium low heat.
- Add the 2 peppers on top of rice.
- Cover pan.
- Simmer for 20-30 minutes or until rice is cooked and liquid is absorbed.
- Remove pepper.
