Fresh Apple Cake
- 1 12 cups sugar
- 34 cup butter (softened)
- 2 eggs
- 2 12 cups flour
- 1 teaspoon baking soda
- 34 teaspoon cinnamon
- 34 cup boiling water
- 2 tea bags
- 3 cups apples (diced)
- 14 cup raisins
- 1 tablespoon candied ginger (chopped)
- 1 cup nuts (chopped)
- Preheat oven to 350 degrees.
- Steep tea in boiling water for 4 minutes.
- Grease and flour loaf pan (10 x 5 x 2.75).
- Cream sugar and butter.
- Beat in eggs.
- Sift dry ingredients together and add alternately with tea.
- Fold in apples, raisins, nuts, and ginger.
- Spread into prepared pan and bake 45-55 minutes or until toothpick comes out clean.
