Cornmeal, Pepper, and Chive Muffins

  1. Preheat the oven to 375.
  2. Lightly coat a 12 cup muffin pan with oil spray.
  3. In a large mixing bowl, beat together the buttermilk, oil, honey, and egg.
  4. Stir in the corn, bell pepper, and chives.
  5. Quickly stir in the flour, cornmeal, and a pinch of salt.
  6. Spoon the batter into the prepared pan.
  7. Bake for 25-30 minutes, or until golden brown and a wooden pick comes out clean.
