Yogurt-Grilled Chicken
- 1 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/2 tsp. ground red pepper (cayenne)
- .13 tsp. ground allspice
- 1 c. plain nonfat or low-fat yogurt
- 1/2 tsp. freshly grated lemon peel
- 2 tbsp. fresh lemon juice
- 2 tsp. minced garlic
- 1/2 tsp. salt
- 6 boneless, skinless chicken-breast halves
- Put cumin, coriander, red pepper, and allspice in a small saucepan.
- Stir over low heat 1 to 2 minutes until fragrant.
- (Take care not to burn spices.)
- Scrape into a medium-size bowl and stir in remaining marinade ingredients until blended.
- Add chicken and gently stir to coat.
- Let stand at room temperature 30 minutes, or cover and refrigerate overnight.
- Heat grill or broiler.
- Remove chicken from marinade.
- Discard marinade.
- Grill or broil 3 inches from heat source 3 to 4 minutes.
- Turn chicken over and broil 3 minutes longer or until opaque in middle.
- Good hot or at room temperature.
