Yogurt-Grilled Chicken

  1. Put cumin, coriander, red pepper, and allspice in a small saucepan.
  2. Stir over low heat 1 to 2 minutes until fragrant.
  3. (Take care not to burn spices.)
  4. Scrape into a medium-size bowl and stir in remaining marinade ingredients until blended.
  5. Add chicken and gently stir to coat.
  6. Let stand at room temperature 30 minutes, or cover and refrigerate overnight.
  7. Heat grill or broiler.
  8. Remove chicken from marinade.
  9. Discard marinade.
  10. Grill or broil 3 inches from heat source 3 to 4 minutes.
  11. Turn chicken over and broil 3 minutes longer or until opaque in middle.
  12. Good hot or at room temperature.
