Citrus-Basil Salmon

  1. In a large shallow dish, whisk together 1 tablespoon of the basil oil, 3 tablespoons of the lemon juice, 3 tablespoons of the lime juice, 1/2 teaspoon of the grated lemon zest, 1/2 teaspoon of the grated lime zest, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper.
  2. Add salmon to dish, turning to coat fillets.
  3. Spray a large nonstick skillet with olive oil cooking spray.
  4. Heat over medium-high heat.
  5. Add salmon, rounded side down, and cook 4 minutes.
  6. Turn fillets and cook 3 to 4 minutes for medium-rare or longer for desired doneness.
  7. Remove from heat.
  8. Spoon the remaining 1 tablespoon basil oil and the remaining 1 tablespoon each lemon juice and lime juice over fillets, dividing evenly.
  9. Sprinkle fillets with the remaining 1 teaspoon each lemon zest and lime zest, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  10. Garnish with strips of basil, lemon zest, and lime zest.
  11. Serve with baby squash or mixed beans.
