Habanero Eggs with Avocado

  1. Oil or butter a hot cast iron skillet.
  2. Beat the eggs well with a pinch if salt (I do this by shaking the eggs in a lidded jar) and pour them into the griddle.
  3. As soon as the eggs begin to cook, use a fork to catch the edge and mive it into the middle.
  4. Do this until the eggs are cooked.
  5. Split the roll and top bith halves with avocado (you can spread it if you prefer...like butter)
  6. Serve the eggs next to the roll, with habanero sauce, to taste.
