Habanero Eggs with Avocado
- 2 eggs
- 1/2 ripe, chilled avocado
- 1 soft wholewheat roll
- 1 dash or two of habanero sauce
- Oil or butter a hot cast iron skillet.
- Beat the eggs well with a pinch if salt (I do this by shaking the eggs in a lidded jar) and pour them into the griddle.
- As soon as the eggs begin to cook, use a fork to catch the edge and mive it into the middle.
- Do this until the eggs are cooked.
- Split the roll and top bith halves with avocado (you can spread it if you prefer...like butter)
- Serve the eggs next to the roll, with habanero sauce, to taste.
