Honey Chicken
- 1 whole Onion, Sliced Into Rings
- 1 pound Boneless, Skinless Chicken Breasts, Cut Into Chunks
- 13 cups Vegetable Oil
- 1/2 cups Honey (any Type)
- 3 Tablespoons Dijon Mustard
- 3 Tablespoons Orange Juice
- 1 teaspoon Curry Powder
- 1/2 teaspoons Pepper
- Slice the onion into rings and place on the bottom of an 8 x 8 casserole.
- Top the onions with chunks of chicken (size of the chunks doesnt matter).
- Combine the oil, honey, dijon, orange juice, curry and pepper in microwaveable container and heat for one minute in microwave.
- Pour over chicken and bake at 350F for 50 minutes to one hour.
