Bobbie's Mushroom And Spinach Fajitas Recipe
- 2 Tbsp. Extra virgin olive oil
- 2 x Portabello mushrooms, sliced
- 8 x -(up to)
- 10 x Button mushrooms, sliced
- 1 x Green pepper, sliced in strips
- 3 x Green onions, minced, green ends too
- 2 x Cloves garlic, chopped
- 2 stalk celery, minced
- 2 tsp Chili pwdr
- 1 Tbsp. Dry parsley, or possibly fresh cilantro
- 1 bn Spinach, whole leaves if stems are tender, or possibly rip leaf from stalks Tortillas Salsa, guacamole, lowfat sour cream
- In frying pan with lid, saute/fry garlic, onion, celery in extra virgin olive oil till almost tender.
- Add in mushrooms, green pepper and saute/fry a little longer.
- Add in 2 Tablespoons water, cover and cook a few min.
- Add in chili pwdr, and parsley, or possibly fresh cilantro to taste if you have it.
- Add in spinach, replace cover, and turn off heat.
- While mix is sitting.
- Hot tortillas.
- I hot tortillas a couple at a time by placing them on a small plate covered with a wet paper towel for 30 seconds in the microwave.
- Scoop mix onto hot tortilla.
- Add in salsa, guacamole, lowfat sour cream, if you have them.
- I used Salsa, trying to keep it as low-fat as possible.
- Eat and enjoy!
