Sweet Potatoes Stuffed Cajun-Style

  1. Preheat oven to 400F.
  2. Scrub sweet potatoes, dry, and set on a cookie sheet.
  3. Bake for about an hour.
  4. Meanwhile, in a skillet, saute onions in oil.
  5. When soft, add celery, cover, reduce heat, and steam (add a few spoons of hot water if needed).
  6. Add tomatoes, okra, and seasonings.
  7. Mix well.
  8. When sweet potatoes are done, remove from oven, slice off a top layer, and remove pulp from shells.
  9. Place pulp in a bowl, blend well with Cajun-style filling and stuff shells with mixture.
  10. Return to oven and heat until warm.
