Fudgey Valentine Cake

  1. Heat oven to 350F (180C).
  2. Grease and flour two 9-inch heart-shaped pans.
  3. In large bowl, beat butter and sugar on medium speed of electric mixer until light and fluffy.
  4. Add eggs and vanilla; beat well.
  5. Stir together flour, cocoa, baking soda and salt; add to butter.
  6. Beat 3 minutes on medium speed.
  7. Add sour cream (or yogurt) and mix well to incorporate.
  8. Pour into prepared pans.
  9. Bake 35 to 40 minutes or until wooden pick inserted in center comes out clean.
  10. Cool 10 minutes, remove from pans to wire racks.
  11. Cool completely.
  12. Frost with pink or red frosting.
  13. For a double layer cake spread raspberry jam (or icing) between the two layers.
  14. Frost and decorate as desired.
  15. As pictured we used home made American Style Frosting.
