Fudgey Valentine Cake
- 23 cup butter or margarine, softened
- 1 3/4 cups sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups flour, all-purpose
- 3/4 cup cocoa powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 1/2 cups sour cream dairy
- Heat oven to 350F (180C).
- Grease and flour two 9-inch heart-shaped pans.
- In large bowl, beat butter and sugar on medium speed of electric mixer until light and fluffy.
- Add eggs and vanilla; beat well.
- Stir together flour, cocoa, baking soda and salt; add to butter.
- Beat 3 minutes on medium speed.
- Add sour cream (or yogurt) and mix well to incorporate.
- Pour into prepared pans.
- Bake 35 to 40 minutes or until wooden pick inserted in center comes out clean.
- Cool 10 minutes, remove from pans to wire racks.
- Cool completely.
- Frost with pink or red frosting.
- For a double layer cake spread raspberry jam (or icing) between the two layers.
- Frost and decorate as desired.
- As pictured we used home made American Style Frosting.
