Spicy Black Beans

  1. Soak beans in water to cover, for 8 hours.
  2. Drain.
  3. Brown ribs in a large dutch oven over medium high heat.
  4. Add onions and garlic, saute until onions are tender.
  5. Add beans, 12 cups water, chile pepper, cumin, and 1 teaspoons salt.
  6. Bring to a boil;reduce heat, cover, and simmer 2-3 hours or until beans are tender.
  7. Add salt to taste.
