Mushroom Barley Kugel

  1. Preheat the oven to 375F (190C).
  2. Cook barley in water in a large pot for 1 hour and 15 minutes.
  3. Meanwhile, saute mushrooms and onion with oil in a frying pan over medium heat for 3 minutes.
  4. Dissolve flour in soy milk and broth and then add sauteed mushrooms and onions.
  5. Simmer 5 minutes longer, stirring constantly.
  6. Add salt and pepper to taste.
  7. Add cooked barley to mixture and mix well.
  8. Press barley-mushroom mixture into a lightly oiled 9x9x2 inch baking pan.
  9. Bake at 375F (190C).
  10. for 30 minutes.
  11. Serve warm.
