Stollen
- 14 cup sugar
- 1 12 cups warm water
- 5 tablespoons yeast
- 1 12 cups butter
- 1 12 cups sugar
- 1 12 cups hot water
- 6 eggs
- 2 tablespoons grated lemon rind
- 2 cups flour
- 1 teaspoon salt
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- 9 cups flour
- 12 lb raisins
- 12 lb mixed citron
- 12 lb slivered almonds
- Dissolve 1/4 cup sugar in 1.5 cups warm water.
- Add 5 tbs yeast and let bloom for 10 minutes.
- In a separate bowl, cream the remaining sugar with the butter and eggs, then mix in the 1.5 cups of hot water and the lemon rind.
- Add 2 cups of flour, mixed with the salt, cinnamon and nutmeg.
- Mix in the yeast mixture, and then gradually mix in the remaining flour.
- Knead well.
- Knead in the raisens, citron, and slivered almonds (dusted with a bit of flour).
- Knead well!
- Raise once.
- Form into loaves, with a log of marzipan in the middle (optional).
- Brush with butter, and bake at 350 for 30 - 45 minutes.
