Apricot Chicken

  1. Place chicken breasts in a single layer in a casserole dish.
  2. Sprinkle the packet of french onion soup over the top.
  3. Add as many halved dried apricots as you want.
  4. Pour juice over until chicken pieces are just covered.
  5. Cover with lid and bake at 200C (approx 390F) for 1 hour or until chicken is cooked.
  6. I like this with mashed potato & green beans.
