Apricot Chicken
- 4 whole Skinless Chicken Breasts
- 1 package Dry French Onion Soup
- 16 whole Dried Apricots, Halved
- 1 carton Peach Or Apricot Juice
- Place chicken breasts in a single layer in a casserole dish.
- Sprinkle the packet of french onion soup over the top.
- Add as many halved dried apricots as you want.
- Pour juice over until chicken pieces are just covered.
- Cover with lid and bake at 200C (approx 390F) for 1 hour or until chicken is cooked.
- I like this with mashed potato & green beans.
