DIY Muesli Recipe
- 1 1/2 c. rolled oats
- 1 c. rolled barley (I didn't have this, I used more oats)
- 1/3 c. oat bran
- 1/3 c. wheat germ
- 1/4 c. almonds
- 1/4 c. hazelnuts
- 1/4 c. pepitas (pumpkin seeds)
- 1/4 c. raisins
- 1/4 c. chopped dates
- 1/4 c. chopped dried pears
- Toast nuts and pepitas in the oven (at 325F or so) until lightly browned and toasty-smelling, about 6-10 minutes.
- Meanwhile, process the oats and barley: place in the bowl of a food processor and pulse several times until some of the grains are almost powdery, but many whole flakes still remain.
- Once processed, dump the grains onto a lined baking sheet with the oat bran and wheat germ, and toast in the oven for just a few minutes.
- The grains should smell slightly toasted, but shouldn't be brown.
- If using whole dried dates, chop into small bits, separate the pieces, and coat in some of the grains to reduce stickiness.
- Chop pears into small pieces.
- Once the nuts are slightly cooled, chop them roughly.
- Mix grains, nuts, and fruit, and mix thoroughly.
- Allow to cool completely, and store in an airtight container.
