Valerie'S Barbecued Pig'S Feet
- 12 pig's feet split the long way (makes 2 pans)
- herbs, spices, hot peppers, amounts according to taste
- juice of 1 lemon
- allspice, whole, to taste
- 2 stalks celery (especially that old stuff hanging around the fridge)
- lots of fresh chopped garlic, at least 6 cloves
- 2 good size onions, chopped
- seasoned salt, soul seasoning, etc.
- colivita vinegar, to taste
- Put all ingredients in a large pot of water, enough to completely cover the trotters.
- Boil until feet are soft, just about all day.
- When done, arrange feet in shallow baking dish, using slotted spoon to avoid excess liquid.
- Coat feet liberally with your favorite barbecue sauce; one that is spicy and full of smoke flavor.
- Bake at 350u0b0, uncovered, until edges of brown begin to show, usually about 1 hour.
