Hash Brown Casserole(Low-Fat Version)
- 1 pkg. frozen hash brown potatoes
- 1 c. sour cream alternative
- 1/2 c. low-sodium chicken broth
- 1 small onion, chopped
- 1 green pepper, chopped
- 1 1/4 c. skim milk
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 3 Tbsp. flour
- 1/2 tsp. dry mustrrd
- 1/2 c. reduced fat Cheddar cheese
- 1/2 c. low-fat Mozzarella or Swiss cheese
- 1 c. corn flakes, crushed
- Saute onion slightly in Pam-sprayed pan.
- Add flour, mustard, salt and pepper.
- Gradually add milk and broth, stirring constantly.
- Cook until thickened.
- Remove from heat and stir in sour cream.
- Combine with potatoes and top with cheese and corn flakes, if desired.
- Bake in 13 x 9-inch Pam-sprayed pan at 350u0b0 for 35 minutes.
